Leafy greens are a staple for many, but concerns about E. coli contamination can be a turnoff. A new University of Illinois Urbana-Champaign study sheds light on why some greens are more susceptible than others.
Why Lettuce Seems to Be Ground Zero for Outbreaks
The study focused on five common leafy greens: romaine lettuce, green-leaf lettuce, spinach, kale, and collard greens. Researchers found that temperature and the greens' physical makeup play a key role in E. coli growth.
"Lettuce provides a breeding ground for E. coli at room temperature," says lead author Mengyi Dong. "However, refrigerating lettuce sharply reduces the bacteria."
Here's the twist: waxy greens like kale and collard greens behave differently. Warmer temperatures slow E. coli growth on these vegetables, but once present, the bacteria can survive longer under refrigeration.
Washing Helps, But Cooking is Key
The good news: kale and collard greens are generally less susceptible to E. coli than lettuce. Plus, they're typically cooked, eliminating the bacteria. While washing lettuce is helpful, Dong warns it doesn't remove all bacteria due to their tight attachment.
Leafy Green's Own Defense Mechanism?
The study also explored the impact of cutting greens. While cut surfaces promote bacterial growth, researchers discovered that spinach, kale, and collard green juice actually possess antimicrobial properties against E. coli!
This finding has exciting possibilities. Isolating the juice (lysate) from these greens could lead to natural antimicrobial sprays or coatings to control contamination throughout the food chain.
Washing, Storing, and Staying Informed: Your Best Defense
"We can't eliminate all pathogens," acknowledges co-author Pratik Banerjee. "Vegetables encounter bacteria naturally."
